15-Minute Chickpea Stir-Fry

Ingredients:

  • 1 can chickpeas, drained and rinsed

  • 1 bell pepper, sliced

  • 2 tablespoons soy sauce (or tamari)

Directions:

  1. Heat a splash of oil in a skillet over medium heat.

  2. Add bell pepper slices and sauté for 3–4 minutes until just tender.

  3. Stir in chickpeas and soy sauce; cook another 3–4 minutes, tossing until warmed through and saucy.

  4. Serve over rice or with tortilla wraps, and season with pepper or a squeeze of lime if you have it!
