Method
Start the rice. Cook instant rice according to package directions (usually 1 cup rice + 1 cup water, bring to boil, cover and simmer 5 minutes).
Heat the pan. While rice cooks, heat vegetable oil in a large skillet over medium-high heat.
Cook the chicken. Add ground chicken, breaking it up with a spoon. Cook for 4-5 minutes until no longer pink.
Add seasonings. Sprinkle in garlic powder and ginger, cook 30 seconds until fragrant.
Add vegetables. Toss in frozen stir-fry vegetables and cook 2-3 minutes until heated through.
Finish with sauce. Pour teriyaki sauce over everything and stir to coat. Cook 1 minute more.
Serve immediately. Divide rice among bowls and top with chicken-vegetable mixture.
Tips
Rice shortcut – Use 90-second microwave rice packets to cut prep time even further.
Extra flavor – Add a squeeze of lime juice just before serving for brightness.
Make it spicy – Stir in a pinch of red pepper flakes with the garlic powder.
