Method

  1. Preheat and prep. Set oven to 425°F and line a large sheet pan with parchment paper.

  2. Season the vegetables. Toss frozen mixed vegetables with 2 tbsp olive oil, salt, pepper, and half the garlic powder directly on the sheet pan.

  3. Start roasting. Roast vegetables for 8 minutes while you prep the fish.

  4. Season the fish. Pat tilapia fillets dry and rub with remaining olive oil, garlic powder, paprika, salt, and pepper.

  5. Add fish to pan. Push vegetables to sides of pan and place seasoned tilapia in the center. Roast together for 5-7 minutes until fish flakes easily.

  6. Finish and serve. Squeeze fresh lemon over everything and serve immediately.
