Method

  1. Prep ingredients. Dice half the onion finely and drain and rinse the black beans in a colander.

  2. Cook chorizo mixture. Heat 1 tbsp oil in a large skillet over medium-high heat. Add diced onion and cook for 2 minutes until softened. Add chorizo and cook 4-5 minutes, breaking it up with a spoon until fully cooked.

  3. Add beans. Stir in drained black beans and cook 1-2 minutes until heated through. Remove from heat.

  4. Assemble quesadillas. Lay 4 tortillas on a clean surface. Divide chorizo-bean mixture evenly among them, then top each with 1/2 cup cheese. Top with remaining tortillas.

  5. Cook quesadillas. Heat remaining oil in the same skillet over medium heat. Cook quesadillas one at a time, 2-3 minutes per side until golden brown and cheese melts. Press down gently with spatula while cooking.

  6. Serve immediately. Cut each quesadilla into triangles and serve hot while cheese is still melty.

Tips

  • Don't overfill – Too much filling makes quesadillas hard to flip and messy to eat. Less is more here!
