Method
Cook the pasta. Boil pasta in salted water according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
Season and cook chicken. While pasta cooks, season chicken pieces with salt, pepper, and half the garam masala. Heat 1 tbsp butter in a large skillet over medium-high heat. Cook chicken for 5-6 minutes until golden and cooked through. Remove and set aside.
Build the sauce. In the same skillet, melt remaining butter. Add diced onion and cook for 2 minutes until softened. Add garlic, remaining garam masala, paprika, and cumin. Cook for 30 seconds until fragrant.
Add tomato and cream. Stir in tomato sauce and bring to a simmer. Add heavy cream and let the sauce reduce for 2-3 minutes until slightly thickened.
Combine everything. Return chicken to the skillet, then add the drained pasta. Toss to coat, adding reserved pasta water if needed to achieve a creamy consistency.
Serve immediately. Garnish with fresh cilantro and serve hot.

Use chicken thighs – They stay tender and add more flavor than chicken breasts in this quick-cooking method.
