Ten-Minute Coconut Chickpea Curry

Method:

  1. Warm 1 tablespoon oil in a pot over medium-high heat and sauté the onion for 2 minutes.

  2. Stir in curry powder and tomato paste until the color deepens, about 30 seconds.

  3. Add chickpeas and coconut milk, bring to a gentle bubble for 5 minutes.

  4. Fold in spinach, season with 3/4 teaspoon salt, and serve over rice.

Make it yours:
